Aromatic and clean, with citrus fruit and fresh hay. The wine is complex and earthy with subtle charry, nutty oak balanced by fresh citrus fruit, citrus peel and straw, with a touch of nettle on the finish. A wonderful dessert wine.

Grown:
Grown at Bimbadgen’s contract Myall Road vineyard, near Griffith, New South Wales. The vineyard comprises 40 hectares managed to produce a moderate yield. The vineyard was planted using the most up to date laser levelling techniques and trellising design ensuring high quality yields suitable for premium dessert wines.
Picked:
An extremely dry year with little rainfall during the growing season. Despite the dry year, environmental conditions necessary for the rampant growth of the fungus Botrytis Cinerea finally occurred by mid year.
Made:
After crushing and overnight skin contact, the un-clarified Semillon juice endured a slow fermentation with a number of selected yeast strains. In addition, a number of different fermentation temperatures and oak treatments were also employed. 14% was transferred to quality new French oak for fermentation, transferred back to the main blend and then a further 14% was aged in the same barrels post ferment. Approximately 60% of the wine was kept in contact with the yeast lees until bottling.
