The Bimbadgen Estate range of wines consist of classic Hunter Valley varietals crafted in a traditional style from within Australia's oldest wine region.

This Shiraz Viognier blend displays floral and mixed berry aromas with some vanillin sweetness. A medium bodied palate full of dark cheerrry and sweet spice flavours with integrated fruit and oak tannins. Made in a style ready to be enjoyed now with red meat dishes such as lamb.

  • Grown:
    The fruit for this Shiraz was grown on Bimbadgen's home vineyard in the Hunter Valley situated on Mcdonald's road, Pokolbin.
  • Picked:
    Machine harvested in optimum conditions - generally in the cooler times of the day. Harvesting occurred in late January and early February.
  • Made:
    The Shiraz and Viognier grapes were harvested together and crushed and de-stemmed into 8 tonne fermenters. Left to cold soak for 2 days to assist in colour extraction before co-fermentation with a selected yeast strain. The ferment was pumped over twice daily to encourage tannin extraction before being pressed off skins and being transferred to oak barrels for malo-lactic fermentation. Maturation in oak barrels lasted 12 months before blending and bottling.

    Alcohol: 13.5% T/A: 6.5 g/L pH: 3.43
  • Appearance:
    Dark purple with red tints.
  • Aroma:
    red berries and cherries with some lifted violet perfume.
  • Palate:
    Pretty red fruit flavours dominate the palate balanced with some savoury tobacco leaf flavours and sweet spices. ripe fruit tannins and many fine oak tannins assist in the soft structure of this wine.
  • Cellaring:
    Medium term (2-3 years) under careful conditions.
  • Food:
    The perfect accompaniment to all red meat dishes.
