The Bimbadgen Regions range of wines showcase a diverse selection of varietals chosen from regions known or identified for their superior quality and expression of flavour.

This blend of Hilltops Cabernet Sauvignon, with Merlot and Cabernet from the Orange region of New South Wales exhibits aromas of ripe mulberries, dark chocolate and a touch of fresh herbs. Vibrant fruit flavours of blueberry and mulberry follow through to the palate with bitter chocolate and a touch of clove spice to finish. This wine is the perfect accompaniment to hearty beef dishes and is ready to drink now or be rewarded with short term cellaring up to 4 years.

  • Grown:
    A blend of two premium grape growing regions. It is a blend comprising of 52 % Hilltops and 48% Orange. The Hilltops Cabernet Sauvignon was grown by Brian Mullany of Grove Estate where the vineyard has large diurnal temperature fluctuations with lovely warm days for ripening and cool nights at 450-600m above sea level. The Orange portion is from the established and long term contract vineyard Angullong situated above 600m elevation.
  • Picked:
    All parcels were harvested throughout March 2010.
  • Made:
    The Hilltops Cabernet Sauvignon was hand plunged twice daily in an open 2 tonne fermenter. A short extended maceration on skins was employed for 10 days post primary fermentation. This was then matured in old Hogsheads for 12 months. The Orange Cabernet Sauvignon and Merlot were fermented in closed fermenters with pumping over twice daily. Some micro-oxygenation was employed on this portion to develop the aroma and palate flavours. Approximately 8 months maturation in a mix of French and American barrels.

    June 2011.
  • Analysis:
    Alcohol: 13.5% T/A: 6.5 g/L pH: 3.47
  • Appearance:
    Deep purple.
  • Aroma:
    Ripe mulberries and bitter chocolate with a hint of fresh herbs.
  • Palate:
    Blueberries and mulberries intermingle in a generous combination with some bitter chocolate and clove spices on the finish. Firm Cabernet Sauvignon tannins give the wine firm structure while the Merlot fleshed out the fruit on the middle palate.
  • Cellaring:
    A lovely fruit forward style of wine which will reward short to medium term cellaring up to 2014.
