Executive Chef – Esca Bimbadgen
Ebonnie Newby is the Executive Chef of Esca Bimbadgen Restaurant at Bimbadgen Estate, Pokolbin.
Ebonnie has relocated back home to the Hunter Valley from time at Melbourne’s Silk Road Bar and Lounge along with Waterfront Restaurant and Station Pier in Port Melbourne. With 10 years experience in the Hunter region, Ebonnie is looking forward to working with the great local produce within the valley again.
Ebonnie began her apprenticeship in Newcastle. Spending time working around Newcastle, as an apprentice at Bayviews at Warners Bay and moving on to Head Chef at Martines, Ebonnie set her sights on the Hunter Valley culinary scene. Ebonnie was able to work and build her talent at Seasons Restaurant in the Hunter Valley Gardens as Sous Chef, and at Terroir, Hungerford Hill. Following Terroir, Ebonnie held the Head Chef position at Petersen’s Champagne House’s Restaurant Cuvee in Pokolbin.
Ebonnie completed a course in commercial cookery at Hamilton Tafe, and further completed a Patisserie Certificate to broaden her talents across the entire menu. She has also competed in an array of competitions, achieving accolades at a state and national level.
Ebonnie is looking to nurture the modern Australian Esca Bimbadgen menu, along with adding her own personal style in the ever changing, seasonal Esca Menu. Ebonnie has enjoyed capturing the region’s true characteristics through seasonal produce and flavours.
