Two day cold soak prior to being hand plunged in open fermenters. Pressed and racked into a 2000L Foudre, 20% into new French oak, balance into old French oak. Malolactic fermentation over six weeks.
15 months in Foudre, new and old oak barriques and puncheons.

The 2015 vintage in Orange was one of the better vintages in recent years. An early start to spring and an ideal growing season pre-Christmas, with moderate maximum temperatures and timely rain to move growth along. Favourable weather post-Christmas allowed fruit to develop in its own time and for harvest to proceed without issue.
