  • Vinification

    Crushed into an open fermenter for 24 hours skin contact before pressing. Unfined before inoculation, a slow fermentation held at 15 degrees to preserve aromatics.

Vintage 2016 was challenging in many ways; hail at flowering followed by 400mm of rain in January placed immense disease pressure on fruit. Hot dry weather in between ensured even and consistent ripening, while the loose bunch structure of Fiano stood it in great stead after the rain. An exciting, emerging varietal in the Hunter Valley.
