2016 Cabernet Merlot
Fruit was crushed and destemmed into an open fermenter; undergoing a two day cold soak before fermentation. To ensure maximum colour extraction, the wine was pumped over twice daily before being left on skins post fermentation for two weeks. Once pressed, malolactic fermentation was completed in old and new barriques and puncheons.
30% Merlot and 70% Cabernet Sauvignon co-fermented
12 months in old and new French oak barriques (225L) and puncheons (500L)
