Each parcel of fruit was crushed and pressed separately, the juice fined and allowed to settle in stainless steel tanks. The clear juice was racked and inoculated with a neutral yeast strain and allowed to ferment at a cool temperature for ten days. The wines remained on yeast lees for a period of three months, before blending in June. Minimal fining ensured the delicate aromatics and flavours were maintained before final filtration and bottling in July.

At the time of harvest, 2014 was regarded as one of the greatest vintages the Hunter Valley had seen. Near perfect growing conditions allowed the winemaking team to harvest precisely as the fruit achieved maturity and balance. Looking back at the finished wines, our initial assessment appears correct. A true collectors vintage.

For those who wonder what happens to those zesty young Hunter Semillon’s once they have celebrated a few birthdays, here is the answer. That simple lemony fruit aroma of youth takes on a complex bouquet of beeswax and honeysuckle. The wine grows deeper, richer in flavour and longer, and that juvenile body of before is transformed into an attractive adult. Spot on.
