The brooding Cask Gin is based on the popular night merchant makers Gin, a small portion is sent to rest in retired shiraz barriques for eight to twelve months and left at a higher percentage. The resulting product is a Gin oozing with floral and herbal notes delicately held with red fruit and toast imparted from time in oak.
