Brilliant bright yellow in colour with a fine, persistent bead. The bouquet opens with layers of preserved citrus, roasted nuts and cashew cream, underpinned by classic brioche, toasted sourdough and subtle struck match complexity from extended time on lees. The palate is powerful yet composed, showing deep, developed citrus flavours—lemon curd and grapefruit pith—wrapped in a creamy, nougat like texture. Extended lees ageing brings savoury depth and a gentle nuttiness, while fine, chalky acidity provides lift and precision. The mousse is refined and persistent, seamlessly supporting the fruit and structure, leading to a long, poised and elegant finish of remarkable length.
