A wine designed to age - this will cellar well for the next decade or more. Bright straw in appearance belying its 5 years of bottle age the aromas are of deep, concentrated lemon curd with a hint of honeysuckle blossom. Rich lemon and limes on the palate complemented by aged semillon development of toast and brioche. Amazing complexity on the finish. Pair it with white fish dishes.

  2015 was a wet vintage, putting pressure on our team to pick between weather windows. This wine shows great class and development which will last for many years to come.

• Tasting Notes

  Pressed into temperature controlled stainless steel and fined prior to inoculation with a neutral yeast strain. A cool and constant fermentation temperature was maintained throughout, preserving delicate aromatics. Fined and filtered prior to bottling.
